About Patria Cocina

A family-owned restaurant rooted in Jalisco: the food, flavors and hospitality we grew up with in Mexico, shared with the city we now call home.

Our name

Patria means homeland

For us it means the people, places, flavors and traditions that shape who we are. It connects our roots in Jalisco with the community Patria Cocina has found in Atlanta. Our journey took us from Jalisco to California before we found a home here, and the traditions we grew up with stayed at the heart of everything.

Growing up, food was family life. Chiles, fruit, vegetables and herbs grew in the backyard, and meals were made with what was fresh. That same philosophy runs our kitchen today.

Chef Octavio Aguirre

A jimador before a chef

Octavio grew up in the agave of Jalisco. Our Agave & Mole Club begins in the highlands there, the Golden Triangle formed by Tepatitlán de Morelos, Arandas and Atotonilco El Alto: red, mineral-rich soil shaped by volcanic history and generations of agave cultivation.

Before he cooked professionally, he worked the fields as a jimador, learning what it means to care for agave from the ground up. That experience lives in every pour behind our bar.

This is not just about flavor. It's about respect, heritage, and connection.

Our food

Mexican cooking in all its depth

Fresh produce arrives through the week. Our sauces and salsas are made in house from fresh ingredients, never canned, and we don't use artificial syrups, dyes or unnecessary additives in our food, aguas frescas or margaritas.

The menu draws on many regions and culinary traditions of Mexico, going beyond the familiar to the dishes, ingredients and flavors that tell a deeper story.

Our drinks

People behind the spirits

Our agave program celebrates the families and producers behind what we pour. Instead of celebrity labels, the shelf favors family-owned, producer-owned and small-batch tequila, mezcal and agave spirits from Mexico: dozens of mezcals from several regions, tequilas from blanco to extra añejo, and special bottles meant to be discovered.
